Bakery & Café be produced in an environmentally friendly manner. Healthy
soils result in healthy food products. Soils prepared and managed
in an ecologically prudent manner will, in the long run produce the
finest tasting, nutrient dense whole foods. We endeavor, wherever
possible, to select our suppliers with this goal in mind. First and
foremost, our goal is to supply our customers with fresh, whole grain
and other whole food products. Although our ultimate goal will be
to purchase all of our raw materials from certified organic farms,
our selection criteria balances this goal with affordability. We are
willing to pay up for certified organic products where
the quality is high and the price premium is economically justifiable.
We will be in a constant process of re-evaluating our raw material
inputs as our business grows and we are able to establish long-term
supplier relationships.

Silent Spring, released in 1962, offered the first shattering
look at widespread ecological degradation and touched off an
environmental awareness that still exists. Rachel Carson's book
focused on the poisons from insecticides, weed killers, and
other common products as well as the use of sprays in agriculture,
a practice that led to dangerous chemicals to the food source.
Carson argued that those chemicals were more dangerous than
radiation and that for the first time in history, humans were
exposed to chemicals that stayed in their systems from birth
to death.
